'Polycyclicaromatic hydrocarbons (PAHs) are well known for their .mutagenic and carcinogenic
activities.Their presence in edible fats and oils has been reported in literature and several developed
countrieshave recommended a maximum limit of PAHs in these edibles. In India, data on PAHs in
.ediblefats and oils is lacking. The PAHs analysis in four varieties of edible oils has been carried out
lIsingHPLCand their qualitative and quantitative results have been reported.
