Description This dissertation serves as a review of literature of the various works that have been done on electrospraying. It focuses on the different advantages and applications, as well as the various techniques of manufacturing encapsulated food bioactives, of both micrometer and nanometer range. The reader is then introduced to the techniques, applications and advantages of multiple layered encapsulations, followed by the latest advancement in the field of nanoencapsulation: coaxial electrospraying. This dissertation also provides a glance into the mathematical modelling of the electrospraying process and the future scope of electrospraying and nanoencapsulation, for the delivery of food bioactives.
